Roasted Sweet Potato & Citrus Harvest Salad
A vibrant, nourishing salad filled with roasted sweet potatoes, citrus, greens, and a simple maple dressing. Sweet, bright, and satisfying enough to enjoy as a light meal or side.

Ingredients
For the salad
2 medium sweet potatoes, peeled and cubed
1 tbsp olive oil
½ tsp cinnamon
Salt and pepper to taste
5 cups mixed greens or baby spinach
2 oranges, peeled and sliced into rounds or segments
¼ red onion, thinly sliced
⅓ cup dried cranberries
⅓ cup toasted pecans or walnuts
¼ cup crumbled feta (optional)
¼ cup roasted pumpkin seeds
Maple Citrus Dressing
3 tbsp olive oil
Juice of 1 orange
1 tbsp lemon juice
1 tsp Dijon mustard
1 tbsp maple syrup
Pinch of salt and pepper
Instructions
1. Roast the sweet potatoes
Preheat oven to 400°F. Toss sweet potatoes with olive oil, cinnamon, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway, until tender and lightly caramelized.
2. Prepare the dressing
Whisk together olive oil, orange juice, lemon juice, Dijon, maple syrup, salt, and pepper.
3. Build the salad
Arrange greens in a large bowl or platter. Add roasted sweet potatoes, orange slices, red onion, cranberries, nuts, pumpkin seeds, and feta if using.
4. Finish
Drizzle dressing over the top just before serving and toss gently.
Notes
Add grilled chicken, chickpeas, or quinoa for extra protein.
Swap oranges for grapefruit during winter months.
Great served warm or chilled.
