Protein Pancakes with Fresh Berries

Fluffy protein-packed pancakes made with wholesome ingredients and topped with fresh berries for an easy breakfast that feels both nourishing and comforting.

Ingredients
1 cup rolled oats
2 eggs
1 ripe banana
½ cup Greek yogurt
1 scoop vanilla protein powder
½ tsp cinnamon
1 tsp vanilla extract
1 tsp baking powder
Pinch of sea salt
2–3 tbsp milk of choice (as needed)

For serving

Fresh strawberries
Blueberries
Maple syrup
Extra Greek yogurt (optional)
Instructions

1. Blend the batter
Add oats, eggs, banana, Greek yogurt, protein powder, cinnamon, vanilla, baking powder, salt, and milk to a blender. Blend until smooth.

Let batter rest for 3–5 minutes to thicken slightly.

2. Cook pancakes
Heat a nonstick skillet over medium heat and lightly grease if needed.

Pour small rounds of batter into the pan and cook for 2–3 minutes per side, flipping once bubbles begin forming.

3. Serve
Stack pancakes and top with fresh berries, maple syrup, and a spoonful of Greek yogurt.
