A Cozy Carrot Ginger Soup For Busy Weeknights
A creamy, comforting soup made with simple ingredients and warming flavors. Perfect for chilly evenings, meal prep, or nights when you need something nourishing without a lot of effort.

Ingredients
1 tbsp olive oil
1 yellow onion, diced
3 garlic cloves, minced
1 tbsp fresh ginger, grated
1 lb carrots, peeled and chopped (about 6–7 large carrots)
1 medium sweet potato, peeled and cubed (optional for extra creaminess)
4 cups vegetable broth
1 cup light coconut milk
1 tsp ground turmeric
½ tsp cinnamon
Salt and black pepper to taste
Juice from ½ lemon
Optional toppings
Pumpkin seeds
Fresh parsley or thyme
Cracked pepper
Greek yogurt swirl
Instructions
1. Sauté the aromatics
Heat olive oil in a large pot over medium heat. Add onion and cook for 4–5 minutes until softened. Stir in garlic and ginger and cook another minute.
2. Add vegetables & spices
Add carrots, sweet potato, turmeric, cinnamon, salt, and pepper. Stir to coat.
3. Simmer
Pour in vegetable broth and bring to a boil. Reduce heat and simmer for about 20–25 minutes until vegetables are tender.
4. Blend
Use an immersion blender (or carefully transfer to a blender) and blend until smooth.
5. Finish
Stir in coconut milk and lemon juice. Taste and adjust seasoning as needed.
Serve warm with crusty bread or a simple side salad.
Notes
Add red pepper flakes if you like a little heat.
Keeps well in the fridge for 3–4 days and reheats beautifully.
Freeze leftovers for easy weeknight meals.
